Oat Flour Muffins

I am more and more convinced of the relationship between wheat and inflammation problems.  On the other hand, Oats are helpful in reducing inflammation.  Click here if you want to read a great article about the benefits of eating oats.

I wanted to try making muffins using Oat flour instead of wheat flour.  There are many recipes out there and it took me a while to come up with something that I really liked.  It was worth the effort!

Cranberry Orange Muffins (with Dark Chocolate Chips)

1 cup oat flour (you can make your own oat flour in a food processor)
1 tsp baking powder
1/2 tsp salt
1 egg
1 Tbsp oil or butter, softened
1-2 Tbsp honey or maple syrup
1/3 cup of butter milk
2 Tbsp of fresh orange zest
1/3 cup semi sweet chocolate chips
A handful of dried cranberries (about 1/3 to 1/2 cup)

This recipe yields about 6 muffins but can easily be doubled, tripled, etc.

Preheat oven at 425 degrees F. It is best to mix the dry ingredients first and then blend in the egg, buttermilk, orange zest, honey and oil before adding the cranberries and chocolate.

Use paper muffin cups in your muffin tin if you don't want to have to grease your pan.  Bake for 15 minutes.

These can easily be stored in the freezer.  I throw one in my purse frozen to enjoy a few hours later for a snack.  It is a great alternative to a granola bar.
